Ingredients for making Pindi Chana-
-1 cup Kabuli Chana
-3 tomatoes (for puree)
-2 onions crushed
1 tsp ginger-garlic paste
-2 green chilies ground
-2 large cardamom
-1 large piece cinnamon
1 tsp coriander powder
1 tsp red chili powder
1 tsp garam masala
1 tsp chole masala
-1/2 tsp baking soda
-2 tbsp green coriander finely chopped
-Oil
– salt to taste
Recipe for making Pindi Chana-
To make this, first of all, wash the chickpea and soak it in water for about 6-7 hours.
Then you make a cloth bundle by placing tea leaves, cinnamon and big cardamom in a muslin cloth cloth.
After this, put water in a pressure cooker and keep the chickpeas to boil.
Then you also put the bundle containing cinnamon and tea leaves in the cooker.
Also, add a spoonful of salt to it and close the lid of the cooker and boil it after 4-5 whistles.
Then after you get out of the gas, first of all remove the bundle of cinnamon and tea leaves.
After this, with the help of a ladle, mash the chickpeas a little.
Then you put some oil in a pan and keep it to heat.
After this, add ginger-garlic, onion and green chili paste and fry it on medium flame.
Then when the color of the paste becomes golden brown, add tomato puree and cook for 5 minutes.
After this, add garam masala, coriander powder, chili powder, chole masala and salt as per taste in this gravy.
Then you cook it on medium heat for about 20 minutes.
After this, when the gravy mixes well in the gram and becomes thick, then turn off the gas.
Now your Spicy Pindi Chana is ready.
Then garnish it with green coriander and serve it hot with naan, paratha or roti.
