Where did the name Kulfi come from?
The making of Kulfi started from the 16th century when India was ruled by the Mughal Emperor Akbar. Various dishes were made in the Mughal kitchen to please Emperor Akbar. Similarly, for the first time, Kulfi was made to please the emperor.
In Ain-i-Akbari, Abul Fazl writes how potassium nitrate was used to make Kulfi. With its help, water was cooled so much that it turned into ice. Then Kulfi was prepared with its help.
During the period of Mughals, the Persian language was used more, that’s why the effect of this language is visible in most of the things. Same is the case with Kulfi. The word Kulfi is derived from the Persian language. Which means covered cup means a cup that is covered.
It is believed that Kulfi originated in Iran i.e. Paras. It was prepared by mixing condensed milk, sugar and saffron. It was made for Emperor Akbar.

For this, the milk was thickened by cooking it on low flame for a long time. When it remained half, sugar was added to it. After this saffron was mixed in it and kept in moulds. There were no fridges during the time of Mughals. That’s why potassium nitrate was used to set Kulfi. In this way the ice and salt prepared from it were kept in a pot. Those molds were kept in it, in which the material of Kulfi was kept.
Race was held to bring snow
According to Akbarnama, when kulfi was presented to the emperor for the first time, he liked its taste very much. In this way Kulfi became a part of the food of the Mughal Empire. But the biggest challenge to make it was ice. To go to which, a race was organized between the horsemen of the Mughals, so that the snow could reach the kitchen of the Mughals as soon as possible.
